substitution

I was on the phone with a friend tonight, multitasking as normal, searching through my fridge to see what to have for supper when I came across organic veggies from last week’s grocery trip…I realized that I had nothing to dip them into, and generally I eat my veggies plain but today felt like a ranch day. (They had come with store ranch dip that was utterly disgusting and tasted of chemicals and preservatives, so I tossed that.) I was going to make my usual yogurt/ranch dip when I discovered I was out of plain yogurt…so…improvise. I’m sure my girlfriend wondered why the blender was running during the course of our conversation ;), but I found a great substitution for sour cream: cottage cheese!
Whip up low fat cottage cheese, a dash of skim milk, and some Hidden Valley Ranch seasoning in a blender, and viola! A tasty dip - I can’t even tell the difference between it and the normal sour cream version. =)
